I played fallen order before playing sekiro. Sekiro is lot harder! there are a lot of similarities - resting points, skills (your base weapon remains the same); you have force powers in fallen order, you have prosthetics in sekiro; you collect essences, stims etc in fallen order, you collect beads and seeds in sekiro.
Jedi: Fallen Order's combat felt a little awkward and cumbersome, and a lot of that was down to the game's attack timing and inconsistent window for parries. On top of that, Jedi: Fallen Order's attack and block animations also affected the flow of combat quite a bit, with attack windups often being unclear, leading to some frustrating deaths.
Jedi Master is the most balanced difficulty in the first game, chances are it's going to be the same case in the sequel. It would also be a good step up to keep things challenging, since you have already mastered Knight-difficulty, I recommend checking it out in JFO first tho, to see if it's of your liking.
